Cooking Instructions
Oven: Preheat oven to 232°C (450°F). Place roast in shallow roasting pan. Insert oven-proof thermometer in centre of roast, avoiding fat or bone. Cook, uncovered, in preheated oven for 10 minutes. Reduce heat to 135°C (275°F) and cook for 35-45 minutes per lb or to an internal temperature of 63°C (145°F) for medium rare. Remove from oven, tent loosely with foil and rest for 15 minutes.
